The Montecucco Rosso "scarafone" was born in a vineyard plot in the Municipality of Cinigiano, close to the area bordering the Orcia river at about mt. 150 above sea level The vineyard covers about 2 hectares, of which a third was planted before 1960, while 2 thirds have been planted for 20 years. The limited quantity of grapes per vine, both for the poor origin of the soil and for the company philosophy, ensures that the product obtained is of a superlative level.
The grapes are harvested in late September / early October, starting with Sangiovese and then with Cabernet Sauvignon. The grapes have a good sugar content, a good thickness of the skin and a balanced patrion of anthocyanins and polyphenols. Fermentation lasts for about 14/16 days. As soon as the wine has been separated from the skins and has exhausted the sugar residues, generally begins the malolactic fermentation in steel tanks and continues in contact with the lees until the passage in oak barrels.
The wine begins its aging in wood after about three months from the harvest. Sangiovese in medium-sized barrels (tonneaux), the Cabernet Sauvignon in small barrels and lasts for about 12/15 months, completing its refinement and maturation and then pass into the bottle. The Blend is composed of 90% Sangiovese and 10% Cabernet Sauvignon and takes place at the end of aging.
The Rosso DOC Scarafone expresses a glass full of aromas that are promptly confirmed by the flavor. The vinous color with red reflections ruby marks a wine with excellent structure and perfect balance. It is recommended to serve it at a temperature of about 18 ° in large glasses. Ideal combination with great dishes based on red meats, game, roasts, scottiglie.
